bendekai huli | vendakkai sambar recipe | bhindi sambar | okra sambar with step by step photo and video recipe. there are several ways the sambar recipe is prepared and varies with state to state and region to region. however this sambar recipe is a typical udupi sambar recipe and is mainly prepared in festival and ceremony feast. basically it is served as one of the main sambar recipe after the rasam rice combination.
even with udupi okra sambar there are several variation to this popular bende koddel or bendekayi huli. the main variation with the recipe is the way it is prepared. basically you can seevendakkai sambar recipe prepared with or without grounded coconut or freshly prepared grounded sambar masala. the grounded coconut based sambar masala includes coriander seeds, cumin seeds, curry leaves, red chillies and optionally methi seeds. it is grounded to fine paste and then added to mixture of lentil and okra pieces boiled in tamarind extract. whereas in this recipe i have not used grated coconut and prepared the okra sambar mainly with lentil and tamarind extract combination. the same recipe can be extended by adding spiced sambar powder but i would heavily recommend to give a try by not adding it.
furthermore some easy tips, variations and serving suggestions to this uniquevendakkai sambar or bhindi sambar.firstly, and more importantly make sure to clean and wipe the okra’s before chopping them for this smbar. there should not be any extra moisture or otherwise it may release its sticky latex or liquid. secondly, add the chopped okra’s only after tamarind extract comes to boil. if it is added before boil it may turn sticky. lastly, in this sambar recipe i have added only green chillies for spice, but you can added 1-2 tsp of sambar powder on top of green chillies. in addition you can ground grated coconut with 1-2 tsp of sambar powder and add it with lentil.

Ingredients
- 1½ cup tamarind extract
- large piece jaggery / gud
- 3 green chilli, slit
- ¼ tsp turmeric / haldi
- few curry leaves
- 1 tsp salt
- 10 bhindi / okra, chopped
- 1½ cup toor dal, cooked
- ½ cup water
- 2 tbsp coriander leaves, finely chopped
for tempering:
- 2 tsp oil
- 1 tsp mustard / rai
- 1 tsp urad dal
- pinch of hing / asafoetida
- 1 dried red chilli
- few curry leaves
Instructions
firstly, in a large kadai take 1½ cup tamarind extract, large piece jaggery, 3 green chilli, ¼ tsp turmeric, few curry leaves and 1 tsp salt.
get the tamarind water to boil.
now add 10 bhindi and mix well.
cover and boil for 10 minutes or till bhindi gets cooked well.
further add 1½ cup toor dal and ½ cup water adjusting consistency.
boil for 3 minutes or till the consistency is achieved.
now prepare the tempering by heating 2 tsp oil in small kadai.
add in 1 tsp mustard, 1 tsp urad dal, pinch of hing, 1 dried red chilli and few curry leaves. allow to splutter.
pour the tempering over sambar and add 2 tbsp coriander leaves.
finally, give a good mix and serve bendekai huli / bhindi sambar with hot steamed rice.

how to make bhindi sambar with step by step photo:

notes:
- firstly, use tender bhindi for more juicy sambar.
- also, add sambar powder as a variation instead of green chilli.
- additionally, cook bhindi well before adding dal.
- finally,bendekai huli /bhindi sambar taste great when prepared slightly sweet and spicy.
