Horse gram usli (in Kannada) or kollu sundal (in Tamil) is a very healthy protein-rich side-dish recipe made using horse gram.

The Karnataka version of huruli bassaru or horse gram rasam is a two-in-one recipe. The cooked horse gram stock is used to make rasam and the cooked horse gram is used to make usli/palya/kollu sundal.

In my previous post, I shared the Horse gram rasam recipe. This post is the second part of the Horse gram rasam recipe as I did not want to make it a very big post.

Health benefits of horse gram

Horse gram is a super-food rich in iron, calcium, protein, anti-oxidants, phosphorous, fibre.

It helps in keeping the body warm, aids in weight loss, a good remedy for digestive issues, menstrual cycle issues, diabetes to name a few.

Do include horse gram regularly in your diet especially in winter and monsoon.

How to serve huruli kaalu usli / kollu sundal

This horse gram usli or kollu sundal is best served with rice and Ragi Mudde (Ragi Ball) along with horse gram rasam / huruli bassaru.

Apart from this, it can also be served as is with chapathi or dosa.

And not to forget, this usli makes for one power-packed healthy snack option as well.

You can also make this for your navarathri naivedya (omit onion if you don’t eat).

Most important ingredients

Personally, I love this usli loaded with onions and coconut.

The onions have to be cooked yet crunchy.

The coconut should be freshly grated and juicy (frozen is also ok if you don’t find fresh coconut).

The taste and flavor that these two ingredients add-in are just amazing.

Since we don’t typically use garlic regularly in our home-style recipes, I haven’t mentioned it here.

But, a clove or two, finely chopped wouldn’t hurt if you like it.

Step-by-Step method

Note: Standard measurement, 1 cup=240ml

Step 1: If you are making Horse gram Rasam, you will already have cooked horse gram. If not, soak 1 cup horse gram in warm water for 2 hours. Pressure cook with 2 cups of water for 6-8 whistles.

Step 2: In a kadai/pan, add in 1 tsp oil. Temper with 1 tsp mustard seeds, a big pinch of asafoetida, few curry leaves, 3-4 spicy dry red chillies, 2 large onions finely chopped. Fry until onions cook well but remain crunchy.

Step 3: Next add in the cooked horse gram, salt to taste, 4 to 5 tbsp (or more) fresh grated coconut. Mix everything well.

Step 4: Lastly, squeeze half a lemon, add in chopped coriander leaves. Mix well and it is ready to be served.

Ingredients

  • 1 cup horse gram

  • 1 tsp cooking oil

  • 3-5 nos. dry red chillies
  • 4-5 tbsp fresh grated coconut
  • salt - to taste
  • 1/2 lemon

Instructions

Notes

  1. Always remember to press a cooked horse gram to check if it is cooked well. Otherwise, cook for some more time.
  2. Adjust the red chillies as per your taste.
  3. Add good amount of onions and coconut for best results.
